Try and live the life of a local Amsterdammer and pick one of their most popular addresses of the eastern part of town: Wilde Zwijnen. There, you will hear Dutch being spoken left and right, as the place is very much known and appreciated by locals, probably because it is not yet crowded with passing tourists. With its wooden tables, old chairs and clear-tone walls, the atmosphere switches from raw and countrylike to industrial and trendy.
Wilde Zwijnen means “wild boar“ in Dutch. You will therefore find many good meats on the menu, even though a few fish and vegetable options also make their way through. The three or four-course tasting menus change almost on a daily basis, highlighting seasonal and local products, like the lamb belly served with white asparagus and green peas, or the flank steak with salsa-verde-inspired sauce and pesto. The chef loves to cook delicate dishes, enhancing often-underestimated fruits and vegetables. Make way for beetroot al dente, Romanesco cabbage, green celery and bittersweet quinces. You will definitely need to make reservations.
