With an eco-responsible approach in mind, Christophe Michalak and Steve Burggraf launched Polichinelle. A way for them to reinvent buffets and French vegetarian cuisine.

Looking somehow hidden in the maze of modern streets of the Beaugrenelle neighbourhood, finding the restaurant may feel like a treasure hunt. To find it easily, look for the blueish facade of the YOOMA Urban Lodge, facing the Seine and the Île aux Cygnes. Polichinelle is actually a restaurant signed by Christophe Michalak, Steve Burggraf and Alexandre Marchon, located on the ground floor of the hotel co-designed by Daniel Buren.

In the vast dining room reminiscent of elegant hotel refectories, vegetables are king. Here, you will find neither meat nor fish. Chefs follow an eco-responsible approach: seasonal menu, organic products and responsible farming, mainly sourced from the outer Paris region, or even from the very vegetable garden installed on YOOMA's rooftop. With a buffet concept, Polichinelle feels like a luxurious canteen that pays tribute to vegetable-based recipes: lacquered custard marrow in miso and roast peaches over eggplant caviar, stuffed tomatoes and watercress sauce, pie by-the-metre covered in cherry tomatoes, zucchini and roast figs… Note that the all-you-can-eat formula is only available for dinner.
