This hot ‘sweet and sour' dish is a typical Japanese preparation. You will find udon, of course—the thick noodles that are consumed very broadly in the archipelago—plus thinly sliced beef, onion, shiitake (black mushroom), and an absolutely exquisite combination of sake, soy sauce, and sugar, all mixed with egg yolk.

Instead of beef, the dish can also be served with fish or shellfish. And in either case, you do not lose on the exchange. Indeed, at Mimiu, the custom is to work exclusively with seasonal ingredients to better enhance your dish.
