Healthy cooking from garden to plate

It's love at first bite for the restaurant Ô Z'épices and its talented chef, who offers seasonal organic cuisine with medicinal virtues.

In Bouillante, above the sea, 40 privileged diners have the chance each day to taste the recipes of Jimmy Bibrac. This is a kitchen like no other, with produce coming from within only 50 metres. How is this possible? Simply by growing vegetables in a large on-site organic garden. There are fruits and vegetables, but also aromatic and medicinal plants like lemongrass, basil, sage, and local redcurrants.

For fish, the fishermen bring their catch of the day. The same goes for meat and poultry. For Bibrac, diet and health are intimately linked and the power of plants is beyond doubt. He works them in all forms, from dishes to desserts and even herbal teas, offered after a meal and chosen according to what you have eaten.

There is no fixed menu, only the slate with daily specials for starters, main courses and desserts, all prepared by the chef. These might include a pair of rock lobsters, fins of ray in turmeric, and, finally, rosemary custard. A tasty and beneficial dining experience.
