Canela defines Palma's new shoreline

This popular bistro in downtown Palma, run by Fabián Fuster and Irene Rigo, serves Mediterranean cuisine infused with strong Asian accents.

A pretty wooden terrace, shoplike front, a room decorated like a Parisian bistro, with mezzanine and open kitchen: the Canela restaurant has quickly become a popular address in Palma. Delicious dishes mixing Mediterranean and Asian cuisine are served simply on small bare tables. The menu is indeed resolutely fusion: soft shell crab tempura served with spicy sweet melon salad, or boar cheek with Korean spices, Alaska Black Cod with Cambodian ones or, to summon Japan on your plate, pork and shrimp gyozas. If you prefer more familiar dishes, know that ceviche, tuna tartar or Waguy beef are also available. For the sweet tooth and hungry, they can devour a hot-cold raspberry and dark chocolate dessert. Note that chef Fabián Fuster, who previously set down his knives in London and Amsterdam, cooks exclusively with seasonal products.
