On the Interamericana, the legendaryhighway connecting Panama to Alaska that runs through Costa Rica, this diner is a convenient and tasty halt between two tourist stops.

It may be at the edge of a busy road frequented by big American trucks, but this is not an ordinary roadside restaurant, as evidenced by its beautiful Spanish colonial architecture, its nice quiet terrace surrounded by a lush garden, and the macadamia shells littered everywhere by way of gravel. The house itself produces these nuts as well as the orchids you are invited to discover more closely in the adjoining farm.

The hearty dishes are prepared in the open kitchen, using local ingredients, most of which are organic. This is the case for traditional Costa Rican casado, a large dish made of rice, red beans, salad, and meat—or palm hearts for the vegetarian version. But you can also enjoy a refreshing gazpacho, well-garnished sandwiches with homemade bread, or huge cookies with chocolate and… macadamia nuts, of course! You can eat in, or take it on the road with you...
